“Forrest Farm Coffee” は自然環境の中で栽培し、

1.  標高1,400〜2,400Mで栽培
2.  最低40%が植物に覆われた環境で自然の日陰がある
3.  最低10種類の樹木に囲まれた場所
4.  農薬の使用を禁止

の４条件をクリアして初めて認定されます。

今回のゲイシャは、エチオピアのKAFFAにあるGanitiという地域にある農園で栽培されたフォレストファーム珈琲です。

早摘みはせず、 完熟し栄養をたっぷり閉じ込めたた実だけを手で収穫し、10～20日間天日で乾燥させることで、香り高いコーヒーになります。

当店では先人の教えを大切にしつつも斬新さを求め、既存の枠にとらわれない焙煎を心がけています。

ゲイシャといえばその特徴を最大限に活かすため、浅煎りで提供されることがほとんどですが、焙煎度を変えて提供することでお客様も焙煎度による味の違いを楽しまれています。

江ノ屋ではKUBAN社の5kg焙煎釜を使用し、一度に3kgだけを焙煎することでムラなくクリーンなコーヒー豆を提供しています。

Cultivated in a natural environment and:

1. Cultivated at an altitude of 1,400-2,400M

2. An environment must be covered at least 40% with  plant and natural shade.

3. A place surrounded by at least 10 types of trees

4. Prohibit the use of chemical pesticides(non organic)

Certification will be granted only after clearing the adove four conditions.

This spesific Geisha is Forest Farm Coffee grown at a farm in Ganiti, KAFFA, Ethiopia.
Rather than picking early, only fully ripe fruits are harvested by hand and dried in the sun for 10 to 20 days.
